Ross Wise, our head winemaker, meticulously selected the best Chardonnay from Hidden Terrace vineyard in Oliver, and Pinot Noir from a cool site above Lake Skaha to create this exceptional blend.
Chardonnay is the dominant variety in this wine, contributing an exquisite creaminess and complexity. Ross explains, “We use a gentle ‘champagne-style’ press cycle and an oxidative winemaking approach to enhance flavour development while creating a harmonious balance between Chardonnay’s richness and crispness.”
Our Sparkling Brut is aged 40 months in the bottle with its yeast, resulting in delightful notes of freshly baked brioche and croissants while maintaining a fruitful freshness. For disgorging, we selected a slightly lower dosage to preserve the dry and serious character of the wine, allowing the craftsmanship to shine.
