12 DAYS OF WINE - DAY 4

At Black Hills Estate Winery, looking after the land, the local environment, and the people that work within it has long been important to us. For some time, we have been farming using time-tested traditional practices and have moved towards organic viticulture. We’ve made investments to reduce our water use through irrigation, we encourage naturally occurring local grasses that are well adapted to our hot and dry summers, and we choose an integrated pest management approach which encourages beneficial insects to keep the vines and fruit healthy.

By farming organically, we are relying more on our natural environment and cultural practices to help keep our vines healthy, balanced, and protected from pests and diseases, rather than the use of inorganic chemicals. While this approach requires high attention to detail in the vineyard, the benefits for our land and our people are significant. ‘Continual quality evolution’ is one of our guiding principles, and organic viticulture is a strong commitment to quality. Viticulture is about farming flavours, and by encouraging healthy and balanced vines that are in tune with their natural environment, we can consistently harvest ripe, intense, concentrated flavours in our grapes. Balanced vines make for truly balanced wines.
